Garden Vegetable Pasta |
This is a really easy pasta dish...
Put
a little bit of olive oil, or butter, in the bottom of a sauce pan, and throw
in some fresh garlic, and a small amount of fresh bell pepper, and maybe a few
onions or celery. (Celery is really good in this). We also like to add
brocolli.
Let those veggies cook a bit, about half way.
Then, all
you have to do is take a bunch of fresh tomatoes, and slice them, or dice them
however you like, and add them into the mix, and let it simmer until everythin
is done. It will only take another 5-7 minutes. |

While this is all taking place, have some water
heating to the point of boiling, and then cook whatever kind of pasta you think
is appropriate.
Don't cook the pasta until it turns mushy... it should
still be slightly firm, when you drain the water, and add it to the veggies so
that it can all simmer together for a few minutes, until you serve it
up. |
