Corn Chowder

QUICK NUTRITION FOR DAILY LIVING:
A delicious and hearty soup that satisfies the appetite
and warms you on those cold winter days and nights.

Ingredients:


1/2 cup chopped bacon, ham or chicken (cooked)
3 Tblsp chopped onion
1/2 cup chopped celery
3 Tblsp chopped green pepper
1 cup diced pared raw potatoes
2 cup milk
1/2 cup water
1/2 tsp salt
3 Tblsp flour
2 cups corn* (fresh, whole-kernal or cream-style canned)

* Most canned creamed corn contains no preservatives or additives, making it one of the more appealing convenience items on the supermarket shelf. If using canned cream-style corn, do not use the salt, flour or water.
Add milk 1 to 1 with the cream-style corn.


Directions:

Saute until golden brown: onion, celery and green pepper.

Add and simmer potatoes, liquids, fresh corn (unless using canned corn, which would be added in the next step below) and salt (if needed). Continue simmering for about 45 minutes or until potatoes are tender.

-OR-
If using canned whole-kernal corn, bring just to the boiling point and add three tablespoons of flour pre-mixed in 1/2 cup of milk. Heat for about 5 minutes and then add the corn. Add milk as desired for consistency/thickness.

-OR-
If using canned cream-style corn bring just to the boiling point and simmer for 5 minutes. Do not add the water, flour or salt.

Do not boil the soup.

Sprinkle with parsley or paprika if desired.

This soup is delicious with corn bread!
