A Grilled Vegetable Basket with any kind of grilled meat, such as steak, is easy and delicious. Just about any kind of vegetable can be used and even some fruits, such as pineapple.
In this Grilled Vegetable Basket we’ve used:
- Corn on the cob (shucked)
- Green Bell Pepper
- Red Bell Pepper
- Yellow Squash
- and 1 Jalapeno Pepper
Some other veggies you can use include: Broccoli, asparagus, onion, zucchini, eggplant, green beans, tomatoes, radicchio. Basically, whatever you have that won’t turn to much while cooking or fall through the wholes in the grilled vegetable basket.
Once you have them cut up, all there is to do is grill them! It’s that simple and SO healthy!
This time we served this grilled vegetable basket with steak. It’s also wonderful with grilled chicken or fish.
You can also do the same process for a barbeque or fire pit. We’ve used both before. When camping, this is one of our favorite recipes to cook over a campfire. You can prepare it before leaving home or right there at the campsite.

Health Note: We have a “health” ritual when it comes to eating. My wife always says, when meat is served with the meal, always take a bite of the meat first. Once you put a bite of food in your mouth, your digestion starts producing the acids necessary to digest the food. Since meat is the most difficult to digest (and takes the longest), letting your system know what to expect is important. Whether that’s true or not, I’m not sure, but she seems to be sure of it. So, I listen!
She has also done a little research on what some health experts advise about not combining fruits and vegetables together in one meal. There doesn’t seem to be any strong evidence about this, so it’s up to you. She does believe that vegetables are “scrubbers” and fruits are “rinsers” but all in all, they work well together. We are much more into veggies than fruit, though. So perhaps we don’t combine fruits and vegetables enough in one meal to be able to make any statement about this.
